This recipe is great in the summer (sorry to all of you in colder climates right now – you will have to save this one for a few months time). It’s easy to make, it’s green, which is always a good thing and it’s delicious. It’s a very quick, healthy recipe. If you make your own dairy kefir this works really well and gives you another option for getting a serving of good bacteria into your gut.
Ingredients – Serves 4
- 1 cucumber, peeled and chopped
- 1 avocado
- 2 green onions
- Juice of 1 lime
- 1 cup of plain yoghurt or home-made kefir
- 1 cup water
- Salt & Pepper to taste
Roughly chop the cucumber, avocado and green onions and toss in the blender. Add other ingredients and process until smooth. If soup is too thick then add water as needed. Garnish with chopped fresh coriander and a dash of cayenne pepper.
