This recipe is great in the summer. It’s easy to make, it’s green, which is always a good thing and it’s delicious. It’s a very quick, healthy Summer soup recipe. If you make your own dairy kefir this works really well and gives you another option for getting a serving of good bacteria into your gut. If you are dairy free you can try it with coconut or almond yoghurt.

Ingredients – Serves 4

  • 1 cucumber, peeled and chopped
  • 1 avocado
  • 2 spring onions
  • Juice of 1 lime
  • 1 cup of plain yoghurt or home-made kefir
  • 1 cup water
  • Salt & Pepper to taste

Method

Roughly chop the cucumber, avocado and spring onions and toss in the blender. Add other ingredients and process until smooth. If soup is too thick then add water as needed. Garnish with chopped fresh coriander or basil and a dash of cayenne pepper to taste.
