Capsicum Cashew Dip for Healthy Snacking
This capsicum and cashew dip is raw, it’s healthy, and it’s great for a party! It is a dairy free cheese alternative that tastes so divine, you may not be able to stop eating it. So easy to prepare as well. It's one of my favourite detox recipes. To make this recipe low FODMAP swap macadamia nuts for the cashews.
Ingredients
1 red capsicum
1/2 – 1 cup raw, unsalted cashews (or macadamia nuts for low FODMAPs)
1/4- 1/2 cup raw sunflower seeds (soak if desired)
Juice of 1 lemon
2-6 Tbls extra virgin olive oil (add slowly and stop when you reach desired consistency)
Sea salt to taste
Method
Add all ingredients into a blender and blend!
Use as a dip or a spread on celery, crackers, sandwiches, cucumbers, you name it!
You can even serve it with zucchini ‘spaghetti’ (use this as the sauce).
Anyway you serve it, it makes a delicious healthy meal or snack. It’s cooling, has protein and lots of other sunny goodness. Increasing the amount of raw food in our diet really helps our energy levels and overall feeling of health and vitality.
